Ayam Suwir Pedas (Spicy Shredded Chicken) is one of the famous food in Java and Bali. This is my second time I tried ayam suwir. Ayam suwir that I made was Ayam Suwir Cabe Hijau (Green Chili Shredded Chicken).
The recipe was adapted from Ayam Suwir Cabe Hijau - Nina Agustina from Catatan Nina
What you need:
- 500 gram chicken fillet, boiled until cooked
- 2 salaam leaves (indian bay leaves)
- 1 cm gingger root
- 1 cm gingger
- 2 fresh kaffir lime leaves
- 1 tbs tamarind (asam jawa)
- 100 ml water (i used chicken stock)
- 2 sdm oil
Spice Paste:
- 10 shallots
- 5 cloves of garlic
- 100 grams red chillies
- 5 bird’s eyes chillies (i didn't use)
- 2 fresh tomatoes
- 2 candlenuts, roast in frying pan without oil
- 1 tsp salt
- 1/2 tsp sugar
Method:
- Shred the chicken.
- Grind or blend the spice paste.
- Heat the oil, then saute the spice paste, gingger root, gingger, salaam leaves, and kaffir lime leaves until fragrant.
- Add chicken, and tamarind. Mix until well.
- Add water and cook until the water absorbed.
- Add sugar or salt to adjust the taste.
